NICOISE SALAD

If there’s one salad I’m in love with, it’s got to be nicoise. I’m typically not a fan of leafy salads but I guess because there are so many components involved in this salad that the leafy greens are an afterthought that’s probably why I’m so fond of it! It’s more of an assembly salad which you toss together after serving. Bon appetit!

CARROT, HERB & BULGUR SALAD

I think the easiest salads are just packed full with herbs. I’m not a fan of leafy green salads so substituting bunches of fresh herbs for lettuce seemed like a great idea. So much flavour for just a few dollars. I’ve bulked up this salad with some grated carrot and bulgur wheat and topped with feta cheese and toasted almonds. So good.

Summer may be ending but my summery soba noodle salads are still going strong. Hiyashi chuka is the answer for when you are feeling like something light and refreshing but still need that carb-y goodness to fill you up. The ingredients are so interchangeable in this recipe but this one is pretty deluxe and stays traditional. Get your bowls ready!

GRILLED CHICKEN & COUSCOUS SALAD

#MasonJarMondays is back! I had a little obsession with packing all of my lunches, mainly salads, in mason jars a couple years ago. I’ve rediscovered it and want to ignite that again. Just how cute is my salad!? Speaking of salads, this grilled chicken couscous salad is the perfect summertime lunch. There is so much flavour that comes from the grill that you can really go easy on the seasoning here. So good.

SALMON POKE

If you don’t know what poke is, then you must have been living under a rock under the last decade, or at the very least, the last five years.
