Curries are always a go-to in my house. It takes no time to make, is extremely, filling and can keep and freeze well. My coconut vegetable curry is often makes an appearance in my roster - a chock full of vegetables swimming in a rich, coconut curry sauce with rice. Why aren't you making this already!?
