I was going to make congee but I’ve done that so many times before. I thought why not make arroz caldo, a Filipino rice porridge filled with delicious aromatics like ginger, garlic and onions. It’s the best thing on a cold, rainy day and the only thing I want to eat when I’m sick. It certainly helps that this recipe is easy as pie.
