STIR-FRIED PEA SHOOTS WITH GARLIC
I’m pretty carb-heavy when it comes to dim sum so to even it out, I need to order some kind of vegetable. Typically, I’ll order gai lan with oyster sauce but when it’s available, I’ll be ordering stir-fried pea shoots with garlic. It’s my personal favourite out of all the vegetable dishes at dim sum.
Tender snow pea shoots are cooked in a wok over high heat with rice wine, salt, oil and lots of garlic. It’s incredibly easy to make and now that I know how to make it at home, you’d be best believe it’ll be finding its way as a side dish on my dining room table often moving forward!
STIR-FRIED PEA SHOOTS WITH GARLIC - serves 2 - 4 (adapted from Omnivore’s Cookbook)
1 lb pea shoots
4 tbsp vegetable oil
1 head garlic, minced
2 tsps fresh ginger, minced
1/4 cup shaoxing wine
3/4 tsp kosher salt
dash white pepper
Go through your pea shoots and discard any that aren’t tender. Each peashoot should should snap when bent. Discard of any that are limp or dull. Wash, rinse and set aside to allow to dry.
In a large wok, heat the vegetable oil around the wok until the oil is glistening over medium-high heat.
Add in the ginger and garlic and sauté until fragrant, about 1 minute.
Add in the pea shoots and toss with the oil and aromatics. Add in the shaoxing wine, salt and white pepper. Continue to toss and stir-fry in the wok until the greens begin to wilt. Turn off heat, remove from pan and serve immediately.
