I’ve finally found a recipe that uses the bag of amaranth that’s been sitting in my pantry - hooray! I made a simple amaranth cookie that I didn’t even have to leave my house for. Nutty, earthy, crunchy and slightly sweet. Perfect with a cup of tea!
