 It’s no secret that I love making quick breads. No matter what the fruit is, each recipe is interchangeable but with similar foundations which makes these breads easy to whip up at any given moment. So when no one was interested in the pears I was ordering for the office, I took them home and baked them into this delicious pear and ginger loaf. And oh my god, was it ever good.

I had found myself with a surplus of danjou pears which is a small green pear, minimally sweet, and a good crunch. It often has brown spots which isn’t a sign of it rotting – it’s just the way the pear is! Unfortunately, people in my office prefer perfectly looking fruit so these babies got left behind at the end of the week. It would pain me to see them being tossed in the compost bin so I scooped up the remaining pears and brought them home, not even knowing what I would be creating with them.

I had busy week of working doubles at both the office and at the hotel and since I was packin’ all the pears, I decided to whip up something easy which is why I created this loaf. I had gone a little crazy during a trip to Trader Joe’s in Portland and completely bought nearly their entire spice aisle. I kid you not. I wanted to replace all of my spices with new ones and TJ’s is always reliable (plus, I wanted everything to be of the same brand for my staple spices). And included in that haul was a jar of ground ginger – a dried spice which I hardly ever use.

Because pears autumn fruit I thought it would work excellently with the ground ginger. Warming spices like cardamom, clove, anise, nutmeg and ginger are a match made in heaven for fall fruits such as apples or pears. Knowing this, I had a sneaking suspicion that would end up being a hit.

And it was! I ended up making two loaves and giving one to my office and one at the hotel. Both instant hits. All were surprised that it was a vegan recipe too. Success!

PEAR & GINGER LOAF - makes 1 loaf

  • 1/3 cup vegetable oil

  • 1/2 cup almond milk

  • 2 chia seed eggs (2 tbsp chia seeds mixed with 1/3 cup warm water)

  • 1 cup all-purpose flour

  • 1/2 cup granulated sugar

  • 1 tsp baking soda

  • 1 1/2 tsp baking powder

  • 3 tsps ground ginger

  • 1/2 tsp ground cloves

  • 1 1/2 cups pears, diced

  • 2 tbsp turbinado sugar

  1. Preheat the oven to 325F and place rack in the centre. Line an 8x4 loaf pan with parchment paper and set aside.

  2. Mix the wet ingredients in a bowl (oil, milk, chia eggs).

  3. In your stand mixer, mix the dry ingredients (flour, sugar, baking powder, baking soda, ground ginger, ground cloves).

  4. Slowly add in the dry ingredients to the wet ingredients and mix until well-incorporated.

  5. Gently fold in the pears.

  6. Pour the batter into the loaf pan and sprinkle with turbinado sugar. Bake for 40 - 45 minutes or until a toothpick comes out clean.
