My god, when was the last time I cooked as a stir fry!? I admit, they’re not my favourite things to cook. They’re very…basic white bitch meals, IMO. That sounded pretty conceited but it’s just not the type of cooking I choose to enjoy when I’m at home.

Because I’m continually playing Chopped with my boyfriend, I am constantly excited over what we’ll be making for dinner. Okay, I’ll be honest. It’s mostly me cooking but hey, I would like to think that he’s actually learning something from this experience. Always good to have some good takeaways from my cooking lessons, right?

Speaking of takeaways, this beef and vegetable stir fry can be made quicker than ordering actually takeaway. A quick marinade which can be done while prepping and chopping the vegetables or left to marinate overnight, some standard vegetables for crunch and colour, all mixed together in a ginger, garlic, soy, lime and sugar-based sauce. This’ll go great over jasmine rice or some Shanghai noodles. Get it! Plus, you’ll have leftovers for days, or, a day. That’s what meal prep is for, right? Don’t forget to add some Sriracha and dried red chili flakes for a little heat if you’re craving for it!

BEEF AND VEGETABLE STIR FRY - serves 4

Marinade

  • 2.5 lbs blade steak, gristle removed and cut into 1” strips

  • 1/2 cup soy sauce

  • 1 lime, juice only

  • 4 garlic cloves, minced

  • 2” knob of ginger, peeled and sliced

  • 1 tbsp fish sauce

  • 3 tbsp brown sugar

  • 2 tbsp corn starch

  • 1 tsp dried red chili flakes

  • 1 tbsp sriracha sauce

Stir Fry

  • 1/4 cup vegetable oil

  • 1 yellow onion, skins off and sliced

  • 5 cloves garlic, minced

  • 1/2 lb white mushrooms, cleaned of all dirt and sliced

  • 4 small carrots, peeled and sliced on the diagonal

  • 1/2 bunch cilantro, stems removed, roughly chopped

  • toasted sesame seeds

  • 4 scallions, sliced

  1. Mix all the ingredients for the marinade together until well-incorporated. Add in the beef and mix thoroughly, ensuring all the beef is covered in the sauce. Cover and let marinate atleast for 30 minutes or overnight.

  2. When ready, heat a wok over medium-high heat with the vegetable oil until hot. Add in the onions and garlic and saute until you see a bit of colour on the onions and garlic, about 3 minutes.

  3. Add in the carrots and stir to saute. Add in beef and marinade and begin to cook, about 4 - 5 minutes until all of the beef is cooked. And in the mushrooms and stir fry until cooked.

  4. Remove from heat and garnish with cilantro, scallions, and toasted sesame seeds. Serve with jasmine rice.
