Mixed fruit and berry crumble

When in doubt, make a crumble. Am I right? Random leftover fruit salad in the fridge? Crumble. Weepy raspberries? Crumble. A couple bruised apples? Crumble. Crumbles are basically a way to make imperfect fruit delicious again. I mean, add a little sugar, top with streusel, and tower it off a la mode with vanilla ice cream. Yeah… Taking something healthy and making it into something not-so-healthy…oops. Alas, I present you with a mixed fruit and berry crumble.

It’s really hard to fuck up crumbles. Seriously, I kid you not. Fruit, sugar, a little flour, crumble mixture. I did try to sneak in a bunch of chia seeds in this to make it a little “healthier” for this recipe which helped it thicken nicely.

Don’t be alarmed if you find your initially fruit mixture “soupy”. When baked, it’ll thicken up quite a bit which, at that point, will achieve that perfect jamminess.

Also, last tip: the amount of butter in your streusel matters! This is what makes it taste so damn good. Don’t skimp out on the butter here. It should form some little dough balls when you are mixing it together. These little packets of butter will melt down and crisp up when baked in the oven - hence the word, “crisp”. Or crumble. Whatever you want to call it.

Let’s get to it.

MIXED FRUIT AND BERRY CRUMBLE - makes 1 8x8” pan

Fruit bottom:

  • 6 cups mixed fruit, chopped (nectarines, plums, kiwis, pears)

  • 1 apple, chopped

  • 1/2 pint raspberries

  • 1/4 cup brown sugar

  • 1/4 cup granulated sugar

  • 4 tbsp cornstarch

  • 1/4 cup chia seeds

  • 1 tsp ground ginger

  • 1/2 tsp ground cardamom

  • 2 tsps ground cinnamon

  • 1/2 cup water

Crumble

  • 2 cups rolled oats

  • 1 cup spelt flour

  • 1/4 cup brown sugar

  • 1/8 cup granulated sugar

  • 3/4 cup butter, chilled and cut into cubes

In a bowl, toss all of the ingredients except for the water together so that the cornstarch and sugars are equally distributed amongst the fruit. Transfer to a saucepan and add the water. Bring to a boil and lower down to a simmer for 10 minutes until slightly reduced.

Preheat the oven to 350F while you prepare the crumble topping.

In a small bowl, mix together all of the ingredients together for the crumble and mix until small pieces of dough form and stick together when pressed.

Pour the crisp into an 8x8” pan or smaller ramekins and pour the crumble atop of it. Insert the baking dish or ramekins into the oven and bake for 15 minutes or until slightly golden on top. Serve immediately wth a scoop of vanilla ice cream.
