TOMATO EGG DROP NOODLE SOUP

Here’s a dish that I regularly make when I’ve got nothing in the fridge: tomato egg drop noodle soup. Its origins are Cantonese, popularized by the ever-so-popular stir-fried tomatoes and eggs. Think that + a soupy base and lots of bouncy noodles and tender egg threads. So easy to make!
