ASH-E RESHTEH

Did you know that there are noodles in Persian cuisine? I didn't know that either! Ash-e reshteh is a Persian herb, legume and noodle stew that is SUPER THICK AF and super satisfying. Its often served as an appetizer and at Nowruz (Persian New Year) and is very easy to make. It's such a great way to use up a lot of those bunches of fresh herbs that you might've forgotten in the fridge - you know what I'm talking about! It's also a VEGAN-friendly dish as well if you don't use kashk! Super yum, what are you waiting for?
