CONDENSED MILK THUMBPRINT COOKIES
CONDENSED MILK THUMBPRINT COOKIES - makes 1 1/2 dozen cookies (adapted from Where is my Spoon?)
1/2 cup unsalted butter, softened at room temperature
1/3 cup granulated sugar
1/3 cup condensed milk
1/4 tsp baking powder
1/8 tsp baking soda
1 1/2 cups all-purpose flour
1/4 cup raspberry jam
Preheat the oven to 350F and line two baking sheets with parchment paper.
Beat the butter and the sugar together for 5 minutes.
Gradually add in the condensed milk until well-incorporated.
Add in the flour, baking powder and baking soda and mix until combined.
Scoop out balls of dough with an ice cream scoop and place onto a cookie sheet 2” apart. Press down with your thumb and fill the thumbprint with raspberry jam.
Bake for 12 minutes, remove from heat and transfer to a cooling rack. Allow to cool for atleast 15 minutes as the cookie will need time to firm up.
