CONDENSED MILK THUMBPRINT COOKIES

CONDENSED MILK THUMBPRINT COOKIES - makes 1 1/2 dozen cookies (adapted from Where is my Spoon?)

  • 1/2 cup unsalted butter, softened at room temperature

  • 1/3 cup granulated sugar

  • 1/3 cup condensed milk

  • 1/4 tsp baking powder

  • 1/8 tsp baking soda

  • 1 1/2 cups all-purpose flour

  • 1/4 cup raspberry jam

  1. Preheat the oven to 350F and line two baking sheets with parchment paper.

  2. Beat the butter and the sugar together for 5 minutes.

  3. Gradually add in the condensed milk until well-incorporated.

  4. Add in the flour, baking powder and baking soda and mix until combined.

  5. Scoop out balls of dough with an ice cream scoop and place onto a cookie sheet 2” apart. Press down with your thumb and fill the thumbprint with raspberry jam.

  6. Bake for 12 minutes, remove from heat and transfer to a cooling rack. Allow to cool for atleast 15 minutes as the cookie will need time to firm up.
